Roti

Unleavened Indian bread

Roti is unleavened flatbread, a staple in South Asian cuisines.

The word comes from Sanskrit for bread.

In its simplest form, roti is whole wheat flour and water, rolled thin and cooked on a griddle.

The term covers many regional variations—from the flaky layers of paratha to the puffed balloon of puri.

In the Caribbean, roti also refers to a wrap filled with curried meat or vegetables: We grabbed chicken roti for lunch.
