Japanese plum
Sour pickling fruit
Japanese plum refers to two distinct fruits.
The first is a small, round stone fruit (*Prunus salicina*) with yellow to red skin, widely cultivated in Asia and California: Japanese plums are juicier than European varieties.
The second is the ume, often called Japanese plum but actually a species of apricot, used to make umeboshi (pickled plums) and plum wine.
