A Cornish hen is a small chicken, typically weighing under two pounds, sold whole as an individual serving.
Despite the name suggesting a hen from Cornwall, these are young chickens of either sex, usually a Cornish crossbreed bred for compact size and tender meat.
Each guest gets their own Cornish hen.
