underfermented
Not fully brewed
Underfermented describes something that hasn't fermented long enough or completely enough.
The term appears most often with bread, beer, wine, and other products where fermentation is essential: The underfermented dough produced a dense, gummy loaf.
Underfermented beer may taste overly sweet or lack expected alcohol content.
