tepache
Mexican pineapple brew
Tepache is a Mexican fermented beverage made from pineapple rinds and core, typically sweetened with piloncillo (unrefined cane sugar) and spiced with cinnamon.
The fermentation is brief—usually just a few days—producing a mildly alcoholic, tangy-sweet drink.
It's traditionally sold by street vendors and served cold: We grabbed tepache from a stand outside the market.
