mezcals

Smoky Mexican drinks

Mezcals is the plural of mezcal, a Mexican distilled spirit made from agave plants.

Unlike tequila, which must use blue agave, mezcal can be made from dozens of agave varieties, giving it diverse flavors.

Traditional production involves roasting agave hearts in underground pits, imparting a characteristic smoky taste: The bar offered six different mezcals.
