marrowbones
Roasted femur segments
Marrowbones are bones, typically from cattle, containing marrow—the soft, fatty tissue inside.
They're roasted or simmered to extract the rich marrow for eating or to flavor stocks and soups: roasted marrowbones with toast.
In older usage, marrowbones referred humorously to the knees: down on his marrowbones meant kneeling.
