A mandoline is a kitchen tool for slicing vegetables into uniform pieces.
It consists of a flat surface with an adjustable blade; you slide food across it to produce thin, even slices.
Mandolines can cut julienne strips, waffle cuts, and paper-thin rounds faster than knife work allows: Use a mandoline for the potato gratin.
