kolaches

Filled dough rounds

Kolaches are Czech pastries—soft, slightly sweet rounds of dough with a depression in the center holding fruit, cheese, or other fillings.

Traditional fillings include poppy seed, prune, apricot, and sweetened farmer's cheese.

The pastries are particularly associated with Texas, where Czech immigrants established bakeries that remain popular: We stopped for kolaches on the way to Austin.

Singular: kolach or kolache.
