Griddled describes food cooked on a griddle—a flat metal surface heated from below.
Griddled foods develop a slight char or crust without the oil pooling of pan-frying: griddled pancakes, griddled vegetables, a griddled cheese sandwich.
The term appears frequently on menus to suggest a particular cooking method and texture.
