gravlaks

Dill-cured fish

Gravlaks is salmon cured with salt, sugar, and dill, then sliced thin and served cold.

The dish originated in Scandinavia, where fishermen buried salmon in the sand to ferment it—the name means "buried salmon." Modern versions skip the burial but keep the cure: gravlaks with mustard sauce on rye bread.

Also spelled gravlax.
