gelatinizing

Turning into jelly

Gelatinizing is the process of converting something into gelatin or a gel-like substance.

In cooking, starches gelatinize when heated with liquid—the granules absorb water and swell, thickening sauces and gravies: The cornstarch is gelatinizing nicely.

The term also applies to industrial processes that create gelatin from animal collagen.
