flash-cooking

Quick high-temperature preparation

Flash-cooking is a technique that uses very high heat for a very short time, searing the outside of food while keeping the inside tender or rare.

The method works especially well for thin cuts of meat, seafood, and vegetables: Flash-cooking the tuna left it beautifully seared outside and raw in the center.

The term also describes any rapid cooking method that preserves texture and nutrients.
