filé
Powdered sassafras leaves
Filé is a seasoning made from dried, ground sassafras leaves, used primarily in Cajun and Creole cooking.
It thickens and flavors gumbo, added at the end of cooking or at the table: She stirred filé into the gumbo just before serving.
The powder has an earthy, slightly sweet taste.
Also spelled file.
