eel sauce
Sweet sushi drizzle
Eel sauce is a thick, sweet-savory glaze used in Japanese cuisine, drizzled over grilled eel (unagi) and other sushi dishes.
Despite the name, it contains no eel—it's made from soy sauce, mirin, and sugar, reduced to a syrupy consistency.
The sauce appears on many American sushi rolls: I asked for extra eel sauce on my dragon roll.
