asparagine

Protein building block

Asparagine is an amino acid, one of the twenty building blocks of proteins in living organisms.

It was the first amino acid to be isolated, discovered in asparagus juice—hence the name.

The body can synthesize asparagine, making it nonessential in the diet.

When foods rich in asparagine are heated at high temperatures, they can form acrylamide, a compound of concern in fried and baked foods.
