acetic anhydride

Vinegar-derived reagent

Acetic anhydride is a pungent, colorless liquid used in chemical manufacturing, most notably in producing aspirin, acetate fibers, and plastics.

It's also a controlled precursor for making heroin, which gives it significance in drug enforcement contexts.

The compound forms when two acetic acid molecules combine with loss of water—hence anhydride, meaning "without water."
