Thai green curry is a Southeast Asian dish of meat, seafood, or vegetables simmered in coconut milk with green curry paste—a blend of green chilies, lemongrass, galangal, and other aromatics.
The "green" distinguishes it from red and yellow Thai curries, which use different chile bases.
Despite its fresh color, it can be intensely spicy.
