French meringue

Sugar-stiffened egg whites

French meringue is the simplest of the three classic meringue types, made by whipping raw egg whites with sugar until stiff peaks form.

Unlike Swiss or Italian meringue, the sugar isn't cooked before or during mixing.

French meringue is lighter and less stable, typically baked into cookies, pavlovas, or piped decorations: The French meringue collapsed because the oven was too cool.
