citrus zest
Grated lemon skin
Citrus zest is the outermost layer of a citrus fruit's peel, removed in thin strips or grated fine.
It contains aromatic oils that add bright, concentrated flavor to cooking and baking: Add a tablespoon of lemon zest to the batter.
Zest comes from oranges, lemons, limes, grapefruits, and other citrus.
The bitter white pith beneath is avoided.
