overbeating
Mixing beyond necessary
Overbeating refers to mixing or whipping a substance—typically a batter, dough, or cream—beyond the point that produces optimal results.
With cake batters, overbeating develops too much gluten, resulting in a tough, dense texture.
With whipped cream, overbeating causes the fat to separate and turn into butter.
The muffins came out rubbery because I overbeat the batter.
The term is most common in cooking and baking contexts where proper mixing technique matters.
