Belgian endive

Bitter salad leaf

Belgian endive is a small, pale, torpedo-shaped vegetable with tightly packed leaves, grown in darkness to prevent bitterness.

It has a mild, slightly bitter flavor and crisp texture, eaten raw in salads or braised as a side dish.

Also called witloof or chicory, though it differs from the leafy green chicory used in salads.
