winter squashes

Hard-shelled fall vegetables

Winter squashes are varieties of squash harvested in autumn when fully mature, with hard rinds that allow storage through winter months.

Unlike summer squashes, which are picked young with tender skins, winter squashes like butternut, acorn, and spaghetti squash develop thick shells and dense, sweet flesh that deepens in flavor during storage.

They typically require cooking—roasting, baking, or pureeing—before eating.

We roasted winter squashes with brown butter and sage.
