summer squashes

Soft-skinned garden vegetables

Summer squashes are varieties of squash harvested while immature, when the skin is still tender and edible.

Unlike winter squashes, which develop hard rinds and store for months, summer squashes are soft-skinned and perishable.

Common types include zucchini, yellow crookneck, and pattypan.

The garden produced more summer squashes than we could eat.
