shoofly pie

Pennsylvania Dutch dessert

Shoofly pie is a Pennsylvania Dutch dessert with a filling made from molasses, brown sugar, and a crumbly topping.

The pie comes in two varieties: wet-bottom, which has a gooey molasses layer beneath the crumbs, and dry-bottom, which is more cake-like throughout.

The name supposedly comes from the need to shoo away flies attracted to the sweet molasses while the pie cools.

Grandma always made shoofly pie for Sunday dinner.
