shiitake mushrooms
Asian culinary fungi
Shiitake mushrooms are edible fungi native to East Asia, prized for their rich, savory flavor and meaty texture.
They have tan to dark brown caps and are used extensively in Asian cuisines, particularly Japanese, Chinese, and Korean cooking.
Available fresh or dried, with dried shiitakes having a more concentrated, intense flavor that reconstitutes when soaked.
I added shiitake mushrooms to the stir-fry for extra umami.
