relevé
Rising onto toes
A relevé is a ballet movement in which the dancer rises from a flat foot to stand on the balls of the feet or on pointe: She held the relevé for three counts before lowering.
The term comes from French meaning "raised" or "lifted." In culinary contexts, a relevé is a course that follows or "relieves" another, typically replacing the fish course with a meat dish in formal dining.
