red wine reduction
Concentrated grape sauce
A red wine reduction is a sauce made by simmering red wine until much of its liquid evaporates, concentrating the flavor into a thick, glossy finish for meat dishes.
The technique intensifies the wine's fruitiness while cooking off most of the alcohol: He drizzled a red wine reduction over the steak.
Often enriched with shallots, stock, or butter.
