hearth cooking

Cooking over flames

Hearth cooking is preparing food directly in or around a fireplace, using the open flame, hot coals, and radiant heat rather than a modern stove.

Traditional techniques include roasting on spits, baking in Dutch ovens nestled in coals, and cooking in cast iron suspended from hooks: She learned hearth cooking at a living history museum.

The practice survives among historical reenactors and those drawn to pre-industrial methods.
