rolling boil
Water's turbulent state
A rolling boil is water boiling so vigorously that the bubbling doesn't stop when you stir it.
Recipes specify a rolling boil when they need sustained high heat—pasta water, blanching vegetables, canning.
It contrasts with a simmer or gentle boil, where bubbles rise lazily and stirring temporarily calms the surface.
