mother of vinegar
Acetic acid culture
Mother of vinegar is the gelatinous film of bacteria that forms on the surface of alcoholic liquids during fermentation into vinegar.
This slimy mass of acetobacter converts alcohol to acetic acid.
Home vinegar makers prize an active mother and may transfer it to new batches to speed the process: Save the mother when you bottle your vinegar.
