maple taffy
Boiled sap candy
Maple taffy is a traditional Canadian treat made by boiling maple syrup and pouring it hot onto packed snow, where it quickly cools into a chewy, stretchy candy.
Also called tire sur la neige (French for "pull on the snow"), it's especially associated with Quebec sugar shacks during spring sugaring season: We rolled the maple taffy onto popsicle sticks.
