lardon
Small bacon piece
A lardon is a small strip or cube of fatty bacon or salt pork, used to add richness to dishes.
Lardons are rendered until crisp and scattered over salads, folded into pasta, or used to flavor stews and braises: a frisée salad with warm lardons and a poached egg.
Also spelled lardoon.
