fatty tuna
Rich belly cut
Fatty tuna is the richest, most prized cut of tuna in Japanese cuisine, taken from the belly where fat marbles through the flesh.
Called *toro* in Japanese, it appears most often in sushi and sashimi, where its buttery texture and mild flavor command premium prices: I always order the fatty tuna when I splurge on omakase.
