A cucumber roll is a type of sushi made by wrapping rice and cucumber in seaweed, with the cucumber typically cut into thin strips running the length of the roll.
Called kappa maki in Japanese, it's one of the simplest and most common vegetarian sushi options: I'll have two cucumber rolls and a spicy tuna.
