brulee

Burnt sugar topping

Brûlée is French for "burned" and appears in English almost exclusively in crème brûlée—a custard dessert with a caramelized sugar top.

The sugar is torched until it forms a crisp, glassy crust: She cracked the brûlée with her spoon.

The technique extends to other dishes: brûléed grapefruit, brûléed bananas.
