blue agave
Mexican succulent crop
Blue agave is a succulent plant native to Mexico, distinguished by its large blue-gray leaves arranged in a rosette pattern.
It is best known as the source of tequila, which by law must be produced from blue agave grown in designated Mexican regions.
The plant takes eight to twelve years to mature before its core, called the piña, is harvested and processed.
The fields of blue agave stretched across the Jalisco highlands.
