blackened catfish

Spicy seared fish

Blackened catfish is a Cajun dish where catfish fillets are coated in spices—typically paprika, cayenne, garlic, and thyme—then seared in a very hot cast-iron skillet until the coating chars.

The technique, popularized by chef Paul Prudhomme in the 1980s, creates a dark, flavorful crust while keeping the fish moist inside: I'll have the blackened catfish with dirty rice.
