pan fried
Cooked in skillet
Pan fried describes food cooked in a shallow layer of hot fat in a skillet or frying pan, as opposed to deep frying (submerged in oil) or sautéing (using less fat with constant stirring).
The technique produces a crispy exterior while keeping the interior moist: pan fried chicken, pan fried dumplings.
