aging barrels
Whiskey's wooden homes
Aging barrels are wooden containers, typically oak, used to mature spirits, wine, or beer over time.
The wood imparts flavor compounds—vanilla, caramel, tannins—while allowing slow oxidation that mellows harsh notes.
Bourbon requires new charred oak barrels; Scotch whisky often uses barrels previously employed for bourbon or sherry.
The whiskey spent twelve years in aging barrels.
