Danish blue
Mottled Scandinavian cheese
Danish blue is a strong, semi-soft cheese from Denmark with characteristic blue-green veins of mold running through its creamy white interior.
Milder and creamier than Roquefort or Gorgonzola, it's often served on crackers or crumbled into salads: a wedge of Danish blue with fruit and wine.
