Danish bacon
Nordic cured pork
Danish bacon is bacon produced in Denmark or according to Danish methods, characterized by lean meat from specially bred pigs and a distinctive curing process.
It typically comes from the back of the pig rather than the belly, yielding longer, meatier rashers than American-style bacon.
Denmark became a major bacon exporter to Britain in the late nineteenth century, and the term still implies quality cured pork: British breakfasts traditionally feature Danish bacon.
