spatchcocks
Flattens for roasting
Spatchcocks are chickens or other poultry that have been split open and flattened for faster, more even cooking.
The backbone is removed and the bird pressed flat before roasting or grilling: I spatchcocked two chickens for the barbecue.
The technique yields crispier skin and shorter cooking times than roasting whole birds.
