wild fermentation
Native microbe brewing
Wild fermentation is the process of fermenting food or drink using naturally occurring yeasts and bacteria rather than adding commercial cultures.
Winemakers, brewers, and bakers who practice wild fermentation rely on microorganisms present on fruit skins, in the air, or on equipment: The cider underwent wild fermentation in oak barrels.
The results are less predictable but often more complex than controlled fermentation.
