Sorghum flour is flour milled from sorghum, a cereal grain widely cultivated in dry climates.
It has a mild, slightly sweet flavor and is naturally gluten-free, making it popular in gluten-free baking: I substitute sorghum flour in my pancake recipe.
The flour produces denser results than wheat flour and is often blended with other gluten-free flours.
