soft shell crab
Recently molted crab
A soft shell crab is a crab caught just after molting, when its new shell is still soft and edible.
The entire crab can be eaten without removing the shell: fried soft shell crab sandwich.
Blue crabs from the Atlantic and Gulf coasts are the most common variety prepared this way.
