Short, intense shot
A ristretto is an espresso made with less water than usual, producing a smaller, more concentrated shot.
The reduced volume extracts fewer bitter compounds, yielding a sweeter, more intense flavor: I'll have a ristretto instead of a regular shot.
Common in specialty coffee shops.
