overproofing

Too much fermentation

Overproofing is letting bread dough rise too long before baking.

The yeast exhausts its food supply and produces too much gas, weakening the gluten structure.

Overproofed dough collapses or bakes flat with a coarse, uneven crumb: The loaf spread sideways—I must have overproofed it.

The opposite problem is underproofing.
