mange-touts
Flat green legumes
Mange-touts are edible pea pods eaten whole before the peas inside mature—the name comes from French for "eat all." The term is primarily British; Americans typically call them snow peas or sugar snap peas.
Stir-fry the mange-touts briefly to keep them crisp.
