Fridge's starchy remainder
Leftover rice is cooked rice that has been refrigerated for later use.
In many cuisines, day-old rice is actually preferred for certain dishes—fried rice turns out better with leftover rice because the grains have dried slightly and won't clump or turn mushy in the pan.
I always make extra rice so I have leftover rice for fried rice the next day.
